Today we are joined by Diego Rodriguez, executive chef at Proof, the Mediterranean-style restaurant near the John Pappajohn Sculpture Garden in downtown Des Moines. Proof still hasn’t reopened its dining room to the public, but it has been hosting Second Saturday events on its patio with five-course meals.
