Bespoke olive oils are having a moment right now. Devotees are expounding on the sweet, spicy or bitter notes almost like sommeliers, poring over labels and categorizing premium products by region and olive varietal.

You can spot a few on the shelves of Costco or Target, like the trendy bright green Graza brand touting single-origin Spanish olives, or Brightland’s Pizza Oil, the bright red bottle of cold-pressed California olive oil with herbs and spices for the finishing touch on the perfect pie. The brand also offers a seasonal lemon-flavored olive oil we can personally vouch for.
